When you buy certified organic, you support conscientious farmers and companies creating a healthy food system from the ground up. Organic standards define principles and practices which must be followed from soil preparation right up to the moment you purchase a products. All crops grown organically use natural fertilizers or compost, to enhance production while building up the living community of the soil. Rotation crops are employed to maintain soil fertility. If used for pest control, chemical compounds must come from a short list of permitted substances, nearly all from natural sources. |

Organic processing
requires meticulous attention to detail.. Processors must protect the integrity of organic products from contamination, dilution and degradation.. To be Certified, facilities and production methods must meet a rigorous set of organic criteria, which include: Organic ingredients must be stored in contaminant-free environments and kept physically separate from conventionally grown products. Production lines must be cleaned of residues from previously processed non-organic products using approved sanitizers. Facility pest control procedures are highly regulated to deter contamination. An organic ingredient may not be diluted by the addition of prohibited ingredients. Minimal processing methods prevent degradation and preserve nutritional quality. |

An audit trail
beginning on the farm follows all certified organic ingredients and products right up to the retail shelf. Both distributors and retailers must follow the organic regulation for pest control and sanitation, keeping bulk items uncontaminated. Storage bins must be properly labeled and thoroughly, frequently cleaned. Organic products generally contain a shorter list of ingredients than their conventional equivalents. Minimally processed, they contain no growth hormones, or non-essential preservatives and stabilizers. Processors may use citric acid, pectin or baking soda, items found in most home kitchens, but no butylated hydroxytoluene for example. The result is a simple, elegant product. By law, 95% of the ingredients of any product labeled organic must be Certified Organic. Typically, the 5% represents minor ingredients - herbs, spices and processing aids such as baking soda. Many products contain exclusively organic ingredients. Consumers should read labels carefully. The placement of the word organic on the label identifies the amount of organic ingredients in the product. For example, organic vegetable soup must contain 95% or more certified organic ingredients. Soup made with organic vegetable can have no less than 50% organic vegetable. Vegetable soup containing less than 50% organic, can choose to identify certified organic ingredients, but only on the ingredients panel. |
